A celebration of serious food in a not so serious way.

Since its opening in early 2017, Bikini has been delighting diner and surprising guests with its culinary creations and premium dining experience. A re-discovery of share plate dining in a quirkily designed space, the restaurant fuses the urban flair of a New York loft style warehouse with the energy and vibe of Miami. It’s luxe, decadent dining, in a playful atmosphere. 

Another venue for Adam McAsey, Bikini joins the 8 Degree Projects portfolio alongside its Seminyak strip neighbors, Sisterfields and BO$$ Man, and one year on, guests are raving about the food, the cocktails and the service, much like his other venues. 

McAsey has been creating international dining experiences abroad for the past five years. “Throughout my time doing business in Bali and travelling the globe for inspiration, the concept behind Bikini was born. The restaurant has been in the making for over two years now and I’m absolutely pumped to bring such a unique dining experience to the island,” explained McAsey. 

Creative Culinary Director Jethro Vincent steers the menu vision for the group, and together with the team has made the decision to not categories their food offerings in a typical way, opening themselves up to creative and whimsical gourmet creations. “The menu is a fusion of what’s in season, what’s on trend and what I love to cook. We have broken it down so diners will be taken on a journey from mouthfuls to shared small and large share plates with inventive cocktails to match,” Vincent elaborated. 

It is the processes used in the Bikini kitchen that help create the intricate, yet accessible menu. All fermenting, pickling, dehydrating and curing are done in house alongside the breads, ice creams, sorbets and syrups. The front bar is led by Head Mixologist (and local award-winning bar champion) Arey Barker, who guides guests and gives drinks recommendations based on your personal preference. Cocktail lovers will experience a twist on ‘classics’ using modern techniques inspired by Bali’s local produce with the likes of olive oil fat washes, house-made syrups and infused gins. 

The interiors of Bikini push the boundaries like no other. Designed by Melbourne-based Travis Walton Architecture and creative agency 21-19 to conceptualize the brand and bring the vision to life. Ultimately, Bikini is a fusion of culinary creativity, sexy interiors and memorable cocktails. As Vincent illustrated, “My vision for Bikini is to bring the highest quality dining experience, something you may get in a fine-dining experience, something you may get in a fine-dining restaurant and make it accessible in a fun, relaxed environment. We like to call it fun-dining.
