MAURI, an exceptional dining destination in the Petitenget area serving contemporary Italian cuisine from Chef Maurizio Bombini and Luigi Amorotti.

Rejoice in the latest epicurean destination to join the list of reputable dining destinations in the Petitenget area. The brainchild of established Chef Owner Maurizio Bombini and Co-Founder Luigi Amorotti, MAURI Restaurant opened its doors last November 2018. Serving contemporary Italian cuisine with a hint of tradition, the name ‘MAURI’ comes from Chef Maurizio’s nickname as his friends and family calls him, which he describes as a symbol of intimacy and trust, a goal he aims to create with his customers.


Chef Maurizio was born in the Apulia region in Southern Italy and learned his craft in the kitchen of his parent’s restaurant off the shores of the Adriatic Sea. His culinary journey has taken him to France, USA, China and Indonesia. Prior to opening MAURI, Chef Maurizio successfully headed Il Ristorante at Bulgari Resort Bali for four years and overseeing the award-winning dining venues at the Ritz Carlton Reserve Mandapa, Ubud for another four years.

After many years working in various countries and restaurants, Chef Maurizio decided that it was time to finally utilize his years of experience and open his own restaurant. Partnering with Italian restauranteur, Luigi Amorotti, owner of Pizza Fabbrica in Canggu, they both merged their respective talents and knowledge to share their culture, tradition and passion in culinary.

“It was a natural evolution. After more than ten years working for Ritz Carlton and Bulgari,
I realized I was ready to open my own restaurant My true passion is cooking, I belong in the kitchen and I want to share this love with my team and guests,” said Chef Maurizio.

Inspired by his Pugliese origin, MAURI offers modern Italian cuisine with a touch of tradition where the ingredients are used at their purest flavours. Using ingredients collected from their hydroponic garden on their rooftop, MAURI’s objectives are to use as much homemade items possible and high-quality local produce from Balinese farmers to serve excellent dishes that respect the ingredients’ seasonality and its origins.

Designed by Usher by Design, the interior design is both charming and warm. Designed in a clean and sleek contemporary style exhibiting the Pugliese warmth, it mirrors Chef Maurizio’s approach in preserving the integrity of ingredients as pure and authentic as possible. The main feature of the restaurant is the glass-enclosed kitchen where guests are granted views of the chefs in their element. The restaurant has a capacity of up to 40 seats on the first level and 5 seats at the Chef ’s counter for private tastings. The Lounge & Bar on the second floor serves light bites and Aperitivo style cocktails, with an outdoor balcony.

With an impressive selection of scrumptious authentic Italian cuisine, interactive and attentive staff, warm hospitality and great ambience, it’s not surprising that MAURI is quickly becoming
a staple in Bali and will most definitely keep on thriving for many years to come. Chef Maurizio has masterfully utilized his years of experience working in the culinary industry to create an impressive dining experience that is a wonderful addition to this ever-growing island.
